If you are looking for comfort food look no further than meatloaf. This smoked version adds some flavors of BBQ like pork rinds, BBQ sauce, and BBQ Rub.
Ingredients
- 1 lb. ground chuck (80/20)
- 1 lb ground pork
- 1 lb ground turkey
- 1 red pepper, diced
- 1 green pepper, diced
- 1 onion, diced
- 4 cloves of garlic, minced
- 2/3 cup BBQ sauce
- 1 cup crushed pork rinds
- 2 tsp dried sage
- 1 tbsp Historic Black
- 2 tbsp Historic Red
Instructions
Place the onion, peppers, and garlic into a pan and place on the smoker at 350°F until softened, about 30 minutes. Remove and allow to cool slightly.
Place all of the ingredients into a large bowl and mix with your hands. Transfer the mixture to a pan or foil-lined cooking rack and form into a loaf. Season the top and sides with Historic Red.
Place on the pan or rack on your smoke at 350°F. Cook the meatloaf to an internal temperature of 160°F, that should take about an hour and a half. Once the internal temp hits 150°F brush your favorite BBQ sauce on the top and sides and let it set during the last 10 degrees of cooking.
Remove from the smoker, slice, and serve!
